Shrimp Salad Recipe
For this Shrimp Salad we recommend you use fresh cherry tomatoes or even a newer variety "grape" tomatoes which are starting to become more widely available.
The secret of making this a show-stopper lies in using tomatoes at their peak of freshness and flavor.
Shrimp Salad serving suggestion
Preparation time: 10 - 30 Min.

|||cherry or grape tomatoes|
|||extra virgin olive oil|
|||fresh marjoram chopped fine|
|||salt and pepper to taste|
|||parsley sprigs for garnish|
- cut the tomatoes in half
- Plunge shrimp into 3 quarts (3 liters) of rapidly boiling water and boil for 2 minutes. Drain and rinse with cold water.
- Peel and (optionally) devein the shrimp.
- Just before serving, combine the shrimp with the tomatoes, sprinkle with the herbs, add oil and vinegar, and salt and pepper to taste.
- Decorate with the parsley sprig.
