Basic Salad Recipe Ingredients

• small shrimp, peeled and deveined
• stalk of celery, diced
• shallot, diced finely
• sweet pickles, diced finely
• mayonnaise
• sour cream
• lemon, just the juice
• chopped dill
• dashes of Tabasco sauce (optional)
• salt to taste
• fresh ground black pepper to taste

Recipe Preparation

  1. If using raw shrimp, bring 2 quarts (2 liters) of water to a rolling boil in a large pot. If using cooked shrimp skip to step 5.  Have a large bowl of ice-cold water ready to cool the shrimp.
  2. Add the shrimp to the boiling water and cook about 2 minutes until the shrimp are pink and firm.
  3. Use a slotted spoon to remove the shrimp and immediately put it in the ice-water to cool.  Drain and dry the shrimp.
  4. Chop the shrimp in coarse pieces and set aside.
  5. Mix the celery, shallot, pickles, mayonnaise, sour cream, lemon juice, and dill in a bowl.  Add the shrimp and stir.  Add Tabasco, if you wish and season with salt and pepper to taste.
  6. Serve immediately or refrigerate until ready to serve.  If you wish you can make the salad in advance and refrigerate in a tight closed container up to 3 days.

Variations

  1. Mint-Shrimp Salad: add 2 teaspoons of fresh chopped mint.
  2. Mediterranean Style Shrimp Salad: add 2 tablespoons of drained capers, 3 chopped anchovies, 3 finely sliced pimientos and increase the mayonnaise to 1/2 cup (120 ml).
  3. Shrimp Salad with Herbs: add 2 teaspoons (10ml) and 1 1/2 (23 ml) marjoram, both finely minced, to your ingredients.
  4. Sesame Shrimp Salad:  Sprinkle 1 tablespoon (15 ml) toasted sesame seeds over your mixed salad.

Good cooking and Bon Appetit!
