Prawn and Green Mango Salad

As you can imagine prawn recipes are abundant in Australia. Surrounded by ocean, prawns are a bit of a national icon. 'Throw another shrimp on the barbie' (ie. Barbecue) was an Australian advertising slogan that really proclaimed the Aussies love of prawns to the world.

Another wonderful thing in abundance in Australia is fresh organic produce. Mixing this with prawns creates one of my all time favorite salads.

1. Pick up freshly cooked prawns from your favorite seafood outlet. Peel them completely, taking off the head, and also de-vein them to ensure pleasing all your dinner guests :).

2. Prepare Salad
* Green Mango - shredded or shaved
* Fresh Coriander - torn
* Fresh Mint - torn in small pieces
* Red Onion - thinly sliced
* Cucumber - thinly sliced
* Fresh Chili - finely chop mild/medium red chili into rings

Optional -
* Carrot
* Chinese Cabbage
Experiment with some of your favorite salad ingredients

3. Prepare Dressing
* Fresh squeezed Lemon juice (or Lime, but Lemons are usually juicier)
* A generous dash of Fish Sauce
* Medium to course ground Hot Chilies
* Fresh Garlic squeezed through garlic press
* A pinch of Sugar

Shake the dressing well. It is tasty immediately, and delicious the next day too.

Put the prawns into the bowl with salad, drizzle the dressing generously over everything, and toss all together in the bowl. Then toss onto your plate and enjoy!

What a great summer shrimp salad

I've tried this using shrimps which, as any shrimp or prawn lover knows is quite OK to do, and found it absolutely delightful. You can come and cook for me anytime if you're going to serve up this kind of fare.
