Shrimp Potato Salad Recipe

This Shrimp Potato Salad Recipe starts with the ever-popular summer favorate of potato salad and steps it up to a new level by adding shrimp. It is simple and easy to make and will certainly be a hit with shrimp lovers.

For ingredients, you'll need:

2 cups boiled potatoes, diced
1/2 pound cooked shrimp, peeled and chopped
3/4 cup celery with leaves, chopped fine
1 tablespoon parsley, minced
1 tablespoon chives, minced
3/8 cup cultured sour cream
1 1/2 tablespoons lemon juice
3/4 teaspoon paprika

Couldn't be simpler. Mix all in a large bowl and toss. Serve chilled in lettuce cups.
