Servings: 2-4

Classic Cocktail  Ingredients

The Shrimp

• medium shrimp (35 per lb. size)
• salt
• fresh ground black peppercorns
• olive oil

The Sauce

• ketchup
• Worchestershire sauce
• bottled horseradish
• lemons juiced
• Tabasco sauce to taste -- 4 or more dashes suggested
• salt to taste

Recipe Preparation

The Shrimp

In this version we suggest broiling, instead of boiling to produce a shrimp with a slightly different texture which you may enjoy.  As an alternative you might use boiled shrimp.

  1. Devein shrimp without peeling.  To do this hold the shrimp gently in one hand and pull the vein out from the neck end with the other.
  2. Pre-heat your broiler.
  3. Combine all your shrimp ingredients in a bowl and toss til completely covered.
  4. Lay all the shrimps in a single layer in a large shallow pan and place under the broiler for about 1 1/2 minutes then turn over and continue for about the same time until the shells turn a pinkish brown color.
  5. Immediately remove from broiler and, after allowing to cool, remove the shells, but leave on the tails.
  6. Chill in a refrigerator.

The Sauce

  1. Combine all the sauce ingredients and mix well.
  2. Refrigerate.

Serve the cocktail by spreading the shrimp on a platter surrounding a bowl of sauce, or in individual glasses or small bowls filled with sauce and the shrimps hanging over the rims as the photo shows.

  1. Mustard Shrimp Cocktail:  Substitute Dijon mustard in place of the horseradish.
  2. Sweet Pickle Cocktail:  Substitute finely chopped sweet pickles, or relish for horseradish.
  3. Sweet 'n Sour Cocktail:  Replace horseradish with commercially prepared sweet and sour sauce.
  4. Thai Mango Cocktail:  Instead of Tabasco, use 2 tablespoons of Thai Mango sauce which is also devlishly spicey.

Let your imagination run free and try substituting some of your own favorite flavors for certain ingredients.

When you come up with a variation you enjoy, let us know about it.

Good cooking and Bon Appetit!
