Fried Shrimp Recipe
The most basic fried shrimp recipe is to simply sautée them in a bit of butter or oil.
James Peterson, in Simply Shrimp, reminds us that shrimp fried in its shell is much more flavorsome and not necessarily a faux pas to serve in the shell. Order shrimp in a fashionable restaurant in Latin America or Europe, especially in Italy, where shrimp is a very common favorite, you'll likely get it served both with head and shell intact.
Sometimes, though you need to sautée shrimp with the shell removed...in the case where you have an especially flavorful ingredient whose essence you wish to permeate throughout the shrimp. In this case, you'd do better to remove the shell before cooking.

Preparation
- Rinse the shrimp and heat the butter or oil to a high temperature in a sauce pan.
- When the butter gets frothy, or the oil starts to ripple toss in all the shrimp together.
- Keep the shrimp in constant motion using a spoon or chopsticks for 3-4 minutes, til the shrimp turn a deep pink.
- Add salt and pepper to taste and serve.
