Fish Stock Recipe
You can use Fish Stock in so many seafood recipes that knowing how to make it is a basic requisite. Fortunately it's simple.

Ingredients

| • | water | ||||
| • | chopped onion | ||||
| • | chopped carrot | ||||
| • | chopped celery | ||||
| • | black peppercorns | ||||
| • | bay leaves |
• 2 lb. (1 kg) fish bones
• 3 qt. (3 l) water
• ½ cup (120 ml) chopped onion
• ½ cup (120 ml) chopped carrot
• ½ (120 ml) cup chopped celery
• 1 Tbsp. (15 ml) black peppercorns
• 4 bay leaves
Preparation
- Rinse fish bones in hot water.
- Place all ingredients in 4-qt. saucepan; bring to a boil over high heat.
- Skim surface. Reduce heat to medium; simmer 20 minutes.
- Strain.
